TMC Remix: Breakfast Egg Muffins

Get ready for our newest TMC Remix: Breakfast Egg Muffins! We partnered with Dalia from DSB Nutrition to create these choline-packed muffins perfect for new moms, they’re also a hassle-free and meal prep friendly breakfast the whole family can enjoy!
We made two versions of these delicious Breakfast Egg Muffins: brussels sprouts with cheddar jack cheese and grilled peppers + onions with goat cheese. The possibilities and combinations are endless, create your own fun version of them!
We love this remix because it is kid friendly, nutritious and easy to make featuring our TMC veggie mix-ins!
These Egg Muffins are super simple to re-create. Just follow the steps below, and plan ahead for your busy week!
Two-Way Breakfast Egg Muffins
Ingredients:
12 Whole Eggs
1/2 cup of shredded Cheddar Jack Cheese
1/2 cup of crumbled Goat Cheese
Salt + ground Black Pepper to taste
Instructions:
Preheat oven to 350° F.
Assemble muffin tin with muffin liners, spray with your favorite non-stick spray (we use avocado oil spray).
Whisk eggs in a large bowl until fully combined. Set aside.
Using a scoop or ladle, pour egg mixture about 3/4 full on each muffin.
Chop brussels sprouts into small bite size pieces and set aside.
Chop grilled peppers and onions into small bite size pieces and set aside.
Next, add grilled pepper pieces on top of 6 muffins, top with goat cheese.
Repeat above step with chopped brussels and cheddar jack cheese.
Garnish each egg muffin with salt and black pepper to taste.
Bake in oven for about 12-15 minutes.
Carefully remove from oven + enjoy!
